Mexican Chocolate Tart

This beautiful and creamy tart melts in your mouth. It has a chocolate crust and a creamy filling made with the unique pili nut, which is a rainforest nut from the Philippines. They have the highest vitamin E and magnesium content of any nut and add a creamy, buttery texture to recipes.

Mexican torte

Chocolate “Graham Cracker” Crust
Ingredients
1¼ cups raw walnuts
1 cup coconut cane sugar
¾ cup raw cacao nibs
1 cup raisins or cranberries
1/8 teaspoon sea salt
Directions
Place all walnuts, sugar, and cacao in a food processor fitted with an s-blade and process until it is finely ground. Add raisins (or cranberries) and process until the crumbs begin to stick together. Do not over-process. Transfer crust mixture into a 9-inch round or rectangular tart pan. Spread evenly and press down with hands to compact and bring the crust up the sides. Set aside.
Creamy Filling
Ingredients
2 cups whole pili nuts; shelled, brown skins left on
½ cup coconut oil
½ cup maple syrup
1½ teaspoons cinnamon
Directions
Place all ingredients into a high-speed blender and blend on high until creamy and smooth. You may need to use a plunger or scraper to get the best consistency. Spread filling evenly over crust and let sit to set. Serve immediately or cover and refrigerate for up to a month.

The Secret Ingredient in My Crème Brûlée….

Crème Brûlée is one of my favorite desserts.

The crunchy sugar topping, the beyond decadent cream.

It is my go to after a fancy meal at most restaurants.
It is a special occasion treat. An Anniversary dessert..
Well, I wanted to create my “Naked” Version, so it didn’t have to be a once in a while kinda thing.

It could be a whenever you want kinda thing.
I am really proud of these 2 recipes, they just turned out perfect.

This has become a permanent recipe item down at The Retreat.
And you’ll never guess the start ingredient…. Cauliflower.
That’s right, I created Cauliflower Crème Brûlée and it is perfection.
I hope you enjoy these as much as I do.

Caramel Crème Brulee

Ingredients
2 cups steamed cauliflower
1 cup coconut milk
¼ cup maple syrup
¼ cup lucuma powder
3 tablespoons unflavored gelatin
1 Tablespoon vanilla extract
½ teaspoon salt

½ cup coconut sugar for topping

Directions
Steam cauliflower for about 15 minutes and then mash, you can use a food processor.

Combine the maple syrup and the lucuma powder in a small bowl and stir until smooth.

In a small pot preheat the coconut milk. Add the unflavored gelatin, salt, vanilla and caramel paste made with the maple syrup and the lucuma.
Mix all these ingredients with the mash cauliflower and put in small containers approximately 3 oz each and put in a fridge at least 4 hours.
When is ready, put a little bit of coconut sugar on top and melt with a torch making a crust. Or you can place the ramekins in the oven on highest rack and turn on the broiler to high. Broil for five to 10 minutes, watching very carefully and rotating them frequently so that they broil evenly. Serve immediately.

Coffee Crème Brulee

Ingredients
2 cups steamed cauliflower, mashed
3/4 cup coconut milk

½ cup concentrated coffee or espresso
1 tablespoon maple syrup
½ cup coconut sugar
3 tablespoon unflavored gelatin
1 tablespoon vanilla extract
½ teaspoon salt

½ cup coconut sugar for topping

Directions
Steam cauliflower for about 15 minutes and then mash, you can use a food processor.
In a small pot preheat the coconut milk and then add the unflavored gelatin, salt, vanilla, coconut sugar and maple syrup.
Make the concentrated coffee using less water to make a stronger flavor or espresso.
Mix all these ingredients with the mash cauliflower and the coffee. Put in small containers approximately 3 oz each and put in a fridge at least 4 hours.
When is ready, put a little bit coconut sugar on top and melt with a torch making a crust. Or you can place the ramekins in the oven on highest rack and turn on the broiler to high. Broil for five to 10 minutes, watching very carefully and rotating them frequently so that they broil evenly. Serve immediately.

The Awakening of “The Mother” in Fathers (A tribute to the men who Love)

As a Happy Father’s Day to all, I want to shed some light on our ever changing view of the mother and father roles. I have been called the quintessential mother. I think that’s because I care for so many- not just my offspring, but on a grand scale. I’ve accepted that title, only because it would seem silly for me to refuse such a grand gesture. I am proud of the children I have raised, of the businesses I have birthed and the many people that I have helped and am honored as I have seen their value systems being placed into practical roles in the world.
In fact, I believe that whatever nurturing affect I have as a mother- I simply work that into my job.

And isn’t that the greatest gift, to give wings to fly on your own.

Now, I can only derive from experience what I am about to share. And its not just about me, it’s about everybody who is a mother, has a mother and or has stepped into mother someone.

This is in the end- really about the fathers of the world.

Because I have witnessed so many men step into the feminine roles that nurture and mold their babies, their businesses and their loved ones.
Lets first begin with the many definitions:

There is, of course the obvious Mother, direct from birth to nurture, and then all the beauty of those who adopt or raise a child -not from blood. That is the NOUN Mother, specifically for women, female gender. Although I know many men who have stepped in as Mothers for their children or even take on the characteristics of Mother by nature. With our gender specific roles shifting and changing in the world, it’s very hard to use Mother solely for a Woman.

8. Used as a title for a woman respected for her wisdom and age.

9. Maternal love and tenderness: brought out the mother in her.

10. The biggest or most significant example of its kind: the mother of all battles.

11. Vulgar Slang Something considered extraordinary, as in disagreeableness, size, or intensity.

#11 Vulgar Slang??? Hey, I didn’t make these up, they are in the dictionary just as displayed. A “mother so and so” as a derogatory term is listed in the definition of mother. Which really shows you how we have evolved. But wait, the best part is about to begin in the descriptions of mother as an adjective. Because mothering is really the subject here, it is the nurturing aspect of men that I want to award here, the ever loving and giving way a man can care for something he loves.

The greatest gift for anyone to achieve in this lifetime is to experience mothering as the expansion of motherhood reaches beyond the mother-child scenario.

As a Man at one time in your life you have probably experienced at least a moment of mothering:

• Birthing a company
• Raising an animal
• Being a (single)parent
• Nurturing a sick or dying friend
• Caring for your partner in a loving nurturing way

And whether you recognize it or not, it is your awakening of the female energy, that part of you that is most comforted and comfortable. It is the Special gift that all men are offered yet NOT all men can achieve. That softness that you bring when you smile upon the world, that warmth you expand when you wrap your arms around your child or loved one is the part that separates you from the neanderthal.

Men- you are changing. Like it or not, you are evolving into more feminine creatures.
And the women of the world thank you.

Cheers and gratitude to all the fathers in the world who have awakened to Motherhood.

I personally like adding just a few drops of stevia. I find that too much has a bitter aftertaste. Or soaked dates. Soaking your dates softens them and you can always use the water they soaked in to sweeten your smoothies as well.

  • 1 peeled, frozen banana, cut into chunks
  • 3 cups kale
  • 2 tablespoons fresh lemon juice
  • 1/2 cup  almond milk

Blend in a high-speed blender until smooth.

Can Green Smoothies Help You Lose Weight?

Lemony Kale Greens Smoothie

This recipe is jam packed with leafy greens. Never drink bok choy? I swear you won’t taste it. This smoothie is sweet and tangy.

1 1/2 cups water

1 1/2 cups green grapes

1 bok choy

1/4 head of romaine lettuce (or 5 large leaves)

4 kale leaves

Juice of 1 meyer lemon

1 frozen banana

Relaxation …

Who has time for that?
What does that mean?

Does that mean watching a movie on television? Does it mean listening to live music at a local bar? (Both of which are entertaining and stimulating — they take us away from ourselves and fill us with euphoria — but I am talking about going into ourselves.) It means making time for YOU. Quiet time. Mindless relaxation. Don’t worry if this sounds like an impossible task. I remember when I felt that way.

There are so many ways to get that mindless time. Some call it meditation, and I know that’s a scary word for a lot of people. I remember when I was told to meditate some years ago. I jumped at the practitioner who suggested it, “I don’t know how!” But, of course, I did know how, we all know how, instinctually. We just forget that we have that option.

Meditation

Meditation doesn’t have to look a certain way. It doesn’t have to look like a yogi in meditation pose, chanting OMMMM with their hands resting gently on their legs, palms up with forefinger slightly touching thumb. But it can. I was extremely intimidated by the thought of meditation when imagining that scenario. It was a ridiculous-looking position and I wouldn’t be caught dead doing that, I thought to myself. I had really created a story around why that wouldn’t work for me. But, I am here to tell you that you don’t have to sit in any particular position — there are no rules for how you quiet your mind.

Unless you wish to take meditation to the next level, or wish to one day teach it, you can meditate however you like. Sometimes when I go on a walk, I pick a focal point on a long path and stay tuned into that and not distracted with other elements. My body keeps moving along the path, and all I hear is my breath while focusing on this pinpoint of nothingness. It’s just plain good practice to “give it a rest,” once in a while.

I also like to take a few minutes to do a simple meditation at home. In the video “How to Balance the Mind,” I show you how to do a 10-minute meditation. It is simple and quick enough to do every day.

Labor Day Recipe: How to make the best raw and vegan onion dip ever!

We’ve all eaten some pretty “gnarly” things at the buffet table.

Usually they are consumed unconsciously, meaning that we didn’t mean to but we couldn’t stop …

With Labor Day weekend, there will be picnics, BBQs, and parties with foods like:

Pigs in a Blanket

Crab dip, which is basically:

Diana Stobo’s Raw Thai Lettuce Wraps: Raw Food Recipe

I don’t know if you can love food as much as I do and be super skinny.

That’s not really the goal, anyway.

The goal is to feel great in your NAKED body.

And the only way I know how to do that is to eat NAKED.

So, I spend much of my time re-creating dishes I love into a new, NAKED version.

A couple of years ago, I was supposed to bring appetizers to a Surfers Christmas party.

I had to make enough for at least 50 people.

I tripled the recipe and ended up with two full trays.

Among the buffet filled with meats, cheeses, breads, dips, chips, and typical party food, my green leafy wraps stood out.

I ran to the bar to grab myself a snifter of tequila — my drink of choice. :)

And, when I returned, there were 5 little leaves left on the two trays combined.

Why I can’t live without Diana Stobo’s Digestive Bitters

It’s hard to make pooping cute.

As I began writing this, I asked my daughter what cute title should I put on this blog.

“Huh?” she asked.

“What would you say about my digestive bitters?” I asked.

She looked confused and said, “Well, I like them … a lot.”

I asked her what she likes about them and she replied, “They make my tummy feel better when I eat stuff. And I feel lighter, and I can tell that things are working because my stomach feels empty about 20 minutes later.”

Sometimes I forget to take my bitters — and it hurts.

Let me explain.
