The Secret Ingredient in My Crème Brûlée….

Crème Brûlée is one of my favorite desserts.

The crunchy sugar topping, the beyond decadent cream.

It is my go to after a fancy meal at most restaurants.
It is a special occasion treat. An Anniversary dessert..
Well, I wanted to create my “Naked” Version, so it didn’t have to be a once in a while kinda thing.

It could be a whenever you want kinda thing.
I am really proud of these 2 recipes, they just turned out perfect.

This has become a permanent recipe item down at The Retreat.
And you’ll never guess the start ingredient…. Cauliflower.
That’s right, I created Cauliflower Crème Brûlée and it is perfection.
I hope you enjoy these as much as I do.

Caramel Crème Brulee


2 cups steamed cauliflower
1 cup coconut milk
¼ cup maple syrup
¼ cup lucuma powder
3 tablespoons unflavored gelatin
1 Tablespoon vanilla extract
½ teaspoon salt

½ cup coconut sugar for topping

Steam cauliflower for about 15 minutes and then mash, you can use a food processor.

Combine the maple syrup and the lucuma powder in a small bowl and stir until smooth.

In a small pot preheat the coconut milk. Add the unflavored gelatin, salt, vanilla and caramel paste made with the maple syrup and the lucuma.
Mix all these ingredients with the mash cauliflower and put in small containers approximately 3 oz each and put in a fridge at least 4 hours.
When is ready, put a little bit of coconut sugar on top and melt with a torch making a crust. Or you can place the ramekins in the oven on highest rack and turn on the broiler to high. Broil for five to 10 minutes, watching very carefully and rotating them frequently so that they broil evenly. Serve immediately.

Coffee Crème Brulee


2 cups steamed cauliflower, mashed
3/4 cup coconut milk

½ cup concentrated coffee or espresso
1 tablespoon maple syrup
½ cup coconut sugar
3 tablespoon unflavored gelatin
1 tablespoon vanilla extract
½ teaspoon salt

½ cup coconut sugar for topping

Make the concentrated coffee using less water to make a stronger flavor or espresso.
Mix all these ingredients with the mash cauliflower and the coffee. Put in small containers approximately 3 oz each and put in a fridge at least 4 hours.
When is ready, put a little bit coconut sugar on top and melt with a torch making a crust. Or you can place the ramekins in the oven on highest rack and turn on the broiler to high. Summertime Balsamic Salad

Summertime Balsamic Salad

Balsamic vinaigrette is one of my favorite flavors. Making your own dressing is the simplest thing and tastes so much better than store bought. I whipped this up from ingredients I had available in my kitchen, I wanted something special to drizzle on my fresh summertime produce. This hearty salad can be served as a side or eaten as a meal.

Balsmaic dressing


  • 1 head lettuce of your choice, torn into bite size pieces (I used Romaine)
  • 1 orange bell pepper, cut into slices
  • 2 persian cucumbers, sliced
  • 3 green onions, cut into small pieces
  • 2 heirloom tomatoes, cut into small pieces

Arrange produce in large bowl and toss with balsamic dressing. Serve immediately and enjoy!

Balsamic Dressing


  • 1/2 cup olive oil
  • 1/4 balsamic dressing
  • 2 tablespoons coconut sugar
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves
  • 1 teaspoon sea salt

Place all ingredients into blender on high until smooth. Store in an airtight container in fridge.


Day 3/4 – Girl on Girl- The Naked Challenge Extra points for the Holidays

There is never a perfect time to do a  cleanse.  There will always be some party, gathering or event that will cause you to stray from the idea.

I know how hard it is to focus on yourself, especially when you need it most.  Karen gets big Kudos for taking the Naked Challenge during the Holidays.  It shows a level of commitment and surrender to her goals.  Sometimes we just have to surrender.  I spent an evening out on the town with Karen, Holiday Parties and cheer.  Karen brought along some water in a fancy bottle and stayed focus throughout the night.  Pretty darn impressive for a self proclaimed wine enthusiast.

Day 2- “Girl on Girl” The Naked Challenge- Beware of the Backwards Burps


Gas and Bloating can occur when you first begin a raw food diet.  It has in the past discouraged many from moving forward.  It is important to consider this discomfort as the build up of a huge release.  When LIVE food causes you tummy pain, think about the fiber and cleansing greens going into the body providing movement for old residual waste.

Hunger is not an issue when doing the Naked Challenge.  Karen had two very large Green Smoothies and a wonderful Sea Weed Wrap, detox tea and water.

She ate when she was hungry and didn’t feel the need for much more.

She did express that her belly felt distended and she was having some gurgling and “backwards burps”

As witnessed with Ryan, a healing crisis may occur, I think for Karen it is going to be in the belly…..

Time will tell..

Day 1- “Girl on Girl” – The Naked Challenge

When you commit to something life changing, everything falls into place.
Karen is a beautiful strong woman who has decided to take on a new way of eating. Does she have a weight loss goal in mind? Absolutely, she does.
Not everyone has the same goals,  I am here to support her in what she wants for herself.  With a meet you where you are approach a lifestyle change unfolds as you wish for.

On the first day of “The Naked Challenge” we measured Karen to see what visible changes can be made in the 10-day challenge



Karen calls her belly her Champagne Cork, I’m really not sure what that means, but it sounds funny enough for me to share 🙂






On Day 1, she has a 34 inch waist



Karen started her day off with the Morning Glory Smoothie, her first liquid meal that wasn’t wine.  Although she doesn’t claim to have a need for Caffeine, I thought we would ease her into the first day.  Watch Karen HERE as she indulges in her “coffee house” treat.

A wrap and a salad for later in the day.  She is complete…and ready for bed.

We will follow her progress through each day….. as Karen changes transforms herself ONE meal at a time.

“The Naked Challenge” Karen preparing her body for detox

Preparing for a detox is sometimes as important as the detox itself.
Preparation may look different for each person depending on where they are starting from.
Stripping away the foods that weigh you down is a great start to detoxification, however, it is only when you begin flooding the body with LIVE greens that you will feel the process speed up. Karen has been documenting her choices with photos… I think it’s important to see what her normal diet looks like before we begin the integration of LIVE foods.

By eliminating meat and dairy, Karen found ways to make vegetarian sandwiches and wraps.
Once she eliminated Wheat and processed flour she turned to creative stir fry’s and soups.

“Girl on Girl” The Naked Challenge-“Getting to know her”

Understanding that a women’s body is different then a man’s body  is very important when coaching someone through a detox.

The “Girl on Girl” Naked challenge is an intimate and humorous approach for real women to feel the support that only women can feel with another woman. Karen has volunteered to be on camera as she transforms herself in 10 days.  Watch Karen as she unveils the beauty beyond the “puff” “poof” or what ever it is that seems to be weighing her down.  In her 45 years, Karen has never dieted before.  She was blessed with a wonderful metabolism that carried her for many years.  She has no ailments, and  no complaints.  Wherever you are in your process, you will find that a huge shift can happen in 10 days.  I interviewed Karen to see where she is mentally for her challenge ahead.   Watch karen HERE as she describes what it will take for her to be happy with how she looks.

After Karen committed to herself, I checked in with her to see if she was ready to roll.  She share her weaknesses, and her average diet before getting Naked.  She was given her first challenge  in this video.  Watch HERE the Bacon loving goddess commit to going Vegan for 6 days.  Without any other guidance than NO meat, and NO dairy, I asked Karen to document her choices in photos.

The first thing that happens when we begin to  strip away the foods that weigh us down, is we are not sure what to eat.

We navigate through old patterns and try to find a way to fit in our new way of eating.   I think she is doing a great job.  It’s certainly not BACON 🙂

Positive Words for Change

WORDS … whether whispered or shouted, they all have a unique vibration. When we set intentions or affirmations, the power of the word guides us through life.

It is easy to get caught in a cycle of negative talk and self-criticism. It is likely that a lot of people finished their feast of thanks last night and began the cycle of self-doubt, judgment and punishment. “I’m stuffed, why did I eat so much?” is what some of us say, but I’m guessing there are worse words out there. ☺ These harsh words or thoughts that ring in our ears are incredibly powerful suggestions to our cells to hold fear and anger, thus inhibiting flow and transformation.

But how can a word change our cells?

It’s amazing that a simple word can change the molecular structure of anatomy. Dr. Masaru Emoto, author of  Messages from Water proved this in a series of experiments that positive words and prayers change the molecules in water. Yogis and yoginis all over the world have transformed their bodies and minds through breath and prayer. Positive thought patterns create positive results.

For those who were amazed by the movie What the Bleep Do We Know? and those who felt it was pseudo-scientific, your results will reflect your beliefs. Personally, I choose to believe there is something greater than me, something greater than the knowledge that we have so far. If we were all to be fixated on only the science we know NOW, would Steve Jobs have ever created Apple? There is no cost in believing that anything is possible.

So, try creating positive thought patterns by saying words that inspire and provoke thoughtful behavior along with affirmations that keep you focused in the NOW, that motivate your true nature to be in harmony with itself.

  • Pick words that resonate with you.
  • Say simple and short words with a repetitive flow.
  • Keep them in the present not the past or future.

I love this Ho’oponopono Cleansing Mantra: “I am sorry, please forgive me, I love you and I thank you.

Begin each morning with a cleansing mantra and continue with positive words. Say these words out loud, whisper them under your breath, or quietly and secretively let them repeat themselves in your mind until they are comfortable and believable to you.

I have placed more than a hundred WORDS in my members area for you to say and reflect upon.

The Naked Challenge — Days 13/14


I’m back from my travels and look at what I found.


A bright and sunny new brother.


After 2 weeks of living the Naked Lifestyle …


He is transformed …


This is what he used to look like …


And this is what he said to me…

  • My body is functioning on a higher level
  • My chiropractic adjustments are smooth and easy
  • My 5-mile runs are faster
  • I have more energy and strength
  • My sense of smell is greater
  • I need less sleep to function
  • Multi-tasking is easier
  • I have sharper cognitive function


All because I “Got Naked”…

The Naked Challenge — Days 11/12


Sometimes you just gotta push through the pain.


Many people who start a detox feel worse before they feel better. Know that it is only temporary and well worth it.
Some people get to an uncomfortable day where they may have stomach issues, headaches or an increase in mucous, and claim that it was a lot easier when they were living on fast and processed foods. But, truth is, once you push through the pain, and peel back each layer, it just gets better and better.
